Maybe you have a *problematic* anti-virus program that is moving everything under Documents, someplace else (happened to me once with BitDefender). Or you have OneDrive active, in which case there should be a shortcut somewhere on the left of your screen, in the Windows Explorer, about OneDrive.
You can also try searching your C: drive (CTRL + F) for something like cachestr, which will reveal the location of your The Sims 4 Documents-folder. Or you can try searching for the picture name; my example screenshot looks like this:
You'll have to replace the first few digits though, with the date on which you created screenshots.
It shouldn't be too hard finding your Documents-folder again, but if you experience these problems more frequently, post back here. Or: play in windowed mode and use an app like "Lightshot" to make screenshots of the game window.

Re: Where are the screen shots
I tried BitDefender, but removed it since it only gave problems when wanting to play the game. So I changed back to avast, which i have never experienced this messy issues with, when gaming. The screenshot folder is still empty...and screenshots still refuse to come to that folder..I have tried to search for screen shots, but the once i took do not even show up when you search...and...the catchestr folder is empty... I never use One Drive nor do i use the cloud either... I am too old fashioned for that stuff...lol.. I really would like tho get this fixed...it is pretty frustrating...

The "cachestr" merely indicates where your The Sims 4 folder is located; you will - from there - need to navigate yourself to the "Screenshots" subfolder.
Then again, maybe you found another glitch in the game...?

Re: Where are the screen shots
I tested the screen shot application that you suggested. But it did not work, it only worked when I was on my desktop window, but did not let me take a screenshot from the game, even if i had it in window mode...

There is no screen shots in the sims 4 s sub folder, where they should bee, it is empty. It does not go in to that folder when you take snapshots, that is the problem and that is so wierd...

The default hotkey is PRT-SCR; if you press it (while having TS4 in windowed mode), the screen should get slightly dark. After that you need to tale your mouse and "draw" an area that you want to screenshot.
You can also try pressing SHIFT + PRT-SCR, which is the default for immediately saving your current screen. If I'm mistaken, it goes under the folder "Lightshot" under Documents.
I'm just mentioning Lightshot because that's the app I'm most familiar with.

When you play the Sims 4 in windowed modus you can use the microsoft snipping tool.
Rightclick on the Windows-icon left-bottom ofn your taskbar,
Go to Search and type snipping tool.
Then rightclick again on snipping tool and select open location.
Make a shortcut on your taskbar.
