Changing the settings to high or higher

I followed the instructions and I can get the game to play, however whenever I attempt to change the settings (and I do restart the game afterwards) it goes "negative"-esque, all white, touches of pink, extremely distorted. I'm also using a MAC, but have it downloaded for PC using Wineskin and everything else is completely fine. I also tried re-installing it and creating a new town and making the options change prior to creating the new town. 

Any advice?
