Would it be possible to install only Expansion Packs with the AIO Installer, or at least install it as-is, but delete stuff pack related items?

Hello,

I don't think either option works with that all-in-one installer. If you really want to "pick and choose", I would suggest using the old "Complete Collection" of The Sims 3. There, you have installers for every individual component.
